Cheesy Ham Casserole


1 12 ounce package curly noodles
1 Tablespoon oil or butter
1 3-ounce jar sliced mushrooms
1/4 cup diced red pepper
1/4 cup diced green pepper
3 medium green onions, diced
1/2 cup frozen peas
1 cup baked ham, sliced thick and cut into cubes

Cheese Sauce
1 tablespoon butter
1 tablespoon flour
1 cup milk
3/4 cup shredded provolone or Swiss cheese Salt and pepper to taste.

1. Prepare noodles according to package directions; drain and pour into a 9 x 13-inch backing dish.
2. In medium skillet, saute mushrooms, peppers and onions in oil or butter until soft but not browned; remove from heat.
3. Rinse peas under hot water until slightly thawed.
4. Add sauted vegetables, peas and ham cubes to noodles.
5. To prepare sauce, melt butter in skillet; stir in flour until well blended.
6. Slowly add milk and cook, stirring, until thickened. Add shredded cheese and stir until cheese melts. Season with salt and pepper to taste.
7. Add sauce to ingredients in baking dish and mix to combine. Bake at 350 degrees for 20 to 25 minutes.
