Yellow Cup Cakes


1 1/8 cup flour
¾ cup sugar
1 ¾ t. baking powder
½ t. salt
¾ c. milk
¼ c. shortening
½ t. vanilla
1/3 c. egg beaters

1. Heat oven to 350o.
2. Line muffin tin with paper liners
3. Beat all ingredients for 3 to 4 minutes, scraping bowl occasionally.
4. Pour into pan.
5. Bake for 20 minutes.
6. Cool!
