Herbed Lobster Tails


2 (6 ounce) lobster tails
2 tablespoons fine, dry breadcrumbs
½ teaspoon minced chives
¼ teaspoon dried whole tarragon
1/8 teaspoon pepper
1/8 teaspoon hot sauce
2 teaspoons margarine, melted Lemon halves (optional)

1. Cut lengthwise through top of lobster shell; press shell open. Starting at cut end of tail, carefully loosen lobster meat from bottom of shell, keeping meat attached at end of tail. Lift meat through top shell opening and place on top of shell. (Lobster meat should remain attached to shell at tail end.) Repeat procedure with other lobster tail. Place lobster tails on baking sheet.
2. Combine breadcrumbs and next 5 ingreadients; stir well. Sprinkle evenly over each lobster. Bake at 400o for 11 minutes or until crubs are golden and lobster flesh turns opaque. Garnish with half a lemon.
Yield: 2 servings (About 11 calories per serving.)
