Cracklin' Potato Skins


2 potatoes, scrubbed, pierced and baked
3 T. butter
1 t. soy sauce
scalions
cheese
bacon

1. preheat oven to 500 degrees
2. In a small saute pan, cook the bacon over medium heat till crisp. Drain.
3. Shred the cheese and wash and chop the scallions.
4. In a small saucepan melt the butter, mix with soy sauce.
5. Cut each ptato in half lenghtwise and then in half crosswise to make four sections.
6. Scoop the soft white part of the potato leaving a shell that is about 1/8 thick.
7. Brush the skins with melted mixture on both sides.
8. Place potatoes skin side down, sprinkle with cheese and scallions and bacon.
9. Bake 10 to 12 min. Drain on paper towels and serve.
