Scones


1 3/4 cups all purpose flour
2 1/2 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
6 tablespoons butter or margarine
2 eggs
1/3 cup milk
1/2 cup raisins

1. Preheat oven to 425 degrees
2. Grease a large cookie sheet
3. In a large bowl, measure flour, baking powder, sugar and salt .
4. Add butter or margarine and with pastry blender cut in until mixture resembles coarse meal.
5. In a small bowl, beat eggs with fork.- Reserve 1 tablespoon. Stir milk and raisins into remaining beaten egg.
6. Stir egg mixture into floured mixture, until just well mixted.
7. Turn dough onto a well floured surface. Form ball and knead lightly about 1/2 a minute
8. Roll or pat into a 8" circle 1/2" thick. Cut into 8-10 wedges.
9. With pancake turner place wedges on cookie sheet.
10. Brush with egg mixture and sprinkle with 2 tablespoons sugar.
11. Bake at 425 for 10-15 minutes- until golden.
12. Serve hot.
