1lb. Boneless chicken cut into strips
2tbs. Corn oil
1 garlic clove
1 cup green pepper - cut into stips
1 carrot cut in strips
1 ½ c. chicken broth
1/8 c. soy sauce
3 tbsp. Sherry (optional)
3 tbs. Vineger
3tbs. Brown sugar
½ tsp. Ginger
1 can (8oz.) pineapple chunks
1 ½ c. instant rice uncooked
1. Brown chicken in skillet in corn oil.
2. Add chicken broth, soy sauce, sherry, vinegar, brown sugar, ginger, and pineapple with juice.
3. Bring to a boil.
4. Throw in the rice and cover.
